- Preheat oven to 325°F and grease/line a muffin tin.
- Blend eggs, cottage cheese, salt, and pepper until smooth.
- Stir in shredded cheese and cooked toppings.
- Pour into muffin cups until 3/4 full.
- Bake for 22–28 minutes until just set.
- Cool slightly before removing and storing.
Notes
1. Blending the eggs and cottage cheese is the key to the "fluffy" texture. 2. Use silicone liners to prevent the eggs from sticking to the pan. 3. Do not overbake; remove when the centers have a slight jiggle to maintain the custard consistency.
