  • 4 cups Tomatoes (cherry, grape, or beefsteak) Use ripe tomatoes for the best flavor.
  • 1/4 cup Olive oil Choose a high-quality olive oil for better taste.
  • 2 tablespoons Vinegar (red wine, white, or balsamic) Red wine vinegar works best.

  • 1 cup Fresh herbs (basil, parsley, or dill) You can mix herbs based on preference.
  • 1 teaspoon Sugar (optional) Use if tomatoes are too tart.
  • 1/4 teaspoon Chili flakes (optional) Add for a spicy kick.
  • 1 tablespoon Lemon juice (optional) For added brightness.

Method

Preparation
  1. Chop tomatoes into bite-sized pieces, either halves or thick slices.
  2. Place in a large mixing bowl with some room to toss.
  3. Add olive oil, vinegar, minced garlic, salt, and pepper to the bowl.
  4. Toss in fresh herbs and mix gently to combine without mashing the tomatoes.
  5. Cover the bowl and refrigerate for at least 1 hour or up to 4 hours to allow flavors to meld.
  6. Serve as desired, possibly adding an extra splash of vinegar before serving.

Notes

For best results, use ripe tomatoes. You can adapt the herbs and seasonings based on your preferences. Leftover marinade can be used as salad dressing.
