Ingredients
  

Pasta and Base
  • 12 ounces rotini pasta Use colorful varieties for a festive look.
Fresh Veggies
  • 1 cup chopped bell peppers (red and yellow)
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced red onion Optional for a zesty flavor.
Cheese and Olives
  • 1 cup cubed mozzarella Small bite-sized pieces are best.
  • 1/2 cup sliced black olives Can be omitted or substituted with artichokes.
Dressing and Garnish
  • 1/2 cup Zesty Italian dressing Store-bought or homemade.
  • 1/4 cup parmesan cheese For sprinkling on top.
  • 1/4 cup chopped fresh parsley

Method
 

Preparation
  1. Boil the rotini pasta according to package directions, then drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the pasta, chopped vegetables, mozzarella, and olives.
  3. Pour the Zesty Italian dressing over the salad and toss to combine.
  4. Let the salad chill for at least 30 minutes before serving to allow the flavors to meld.
Serving
  1. Before serving, give the salad a quick stir and add more dressing if needed.
  2. Garnish with parmesan and parsley before serving.

Notes

This salad can be made ahead of time and is perfect for potlucks. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
