Main ingredients
  • 6 cups cubed watermelon Choose a ripe watermelon.
  • 8 ounces block of feta cheese Opt for feta packed in brine.
  • 1/4 cup sliced red onion Soak in ice water to mellow the flavor.
  • 1/4 cup chopped fresh mint Adds freshness.
  • 1/4 cup pumpkin seeds Optional for added crunch.
Dressing
  • 2 tablespoons fresh lime juice Essential for brightness.
  • 2 tablespoons olive oil For richness.
  • 1/2 teaspoon sea salt To taste.
  • 1/4 teaspoon black pepper To taste.
  • 1 teaspoon honey Optional for sweetness.

Method
 

Preparation
  1. Cube the watermelon, slice the red onion, and chop the fresh mint.
  2. Soak the sliced red onions in ice water for about 10 minutes to reduce bitterness.
Assembly
  1. In a large bowl, combine the cubed watermelon, drained red onions, feta cheese (crumbled), and fresh mint.
  2. In a small bowl, whisk together lime juice, olive oil, sea salt, black pepper, and honey (if using).
  3. Drizzle the dressing over the salad and toss gently to combine.
Serving
  1. Serve immediately for best texture, or refrigerate briefly before serving.
  2. Optionally, add toasted pumpkin seeds on top just before serving.

Notes

Best enjoyed fresh but can be made a few hours in advance; do not mix the salad until ready to serve.
