  • 1 lb ground turkey Can substitute with ground chicken
  • 2 medium sweet potatoes, diced Can substitute with butternut squash or white potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes Alternatively, can use broth if you skip tomatoes
  • 2 tbsp tomato paste
  • 2 cups fresh greens (spinach or kale) Use whatever greens you have
  • 1 large bell pepper, diced Optional, for added color and crunch
  • 2 tsp smoked paprika
  • 1 tsp Italian herbs Optional
  • 1 cup shredded cheese (cheddar or mozzarella) For topping and mixing in
  • to taste salt and pepper

Method
 

Preparation
  1. Brown the ground turkey in a skillet over medium heat until golden.
  2. Add chopped onions and minced garlic; cook until fragrant.
  3. Stir in diced sweet potatoes and bell pepper; let them soften.
  4. Pour in diced tomatoes and tomato paste, mixing thoroughly.
  5. Add greens and spices; stir until well combined.
  6. Simmer if there is excess liquid until thickened.
  7. Transfer mixture to a casserole dish and sprinkle with shredded cheese.
  8. Bake at 375°F for about 25 minutes or until the cheese is bubbling.

Notes

For meal prep, double the recipe and freeze half. Best reheated. Mix spices with tomato paste for better flavor distribution.
