Tater Tot Appetizer Cups

Bite-sized potato nests made from tater tots, filled with melted cheddar and topped like a loaded baked potato.

Ingredients
  

  • 48-60 frozen tater tots approx. 450 g
  • 75 g cheddar cheese shredded
  • 120 ml sour cream
  • 4 slices bacon cooked and crumbled
  • 2 green onions sliced (green parts only)
  • Cooking spray

  • Muffin pan
  • Shot glass
  • Cooking spray

Method
 

  1. Preheat oven to 230°C and grease a mini muffin pan.
  2. Place 2-3 tots per cup and bake for 10 minutes on the bottom rack.
  3. Press a greased shot glass into each cup to form a potato nest.
  4. Bake for 15 more minutes until deep golden and crisp.
  5. Add a pinch of cheese to each cup and bake for 4-5 minutes to melt.
  6. Cool for 5 minutes, then remove from the pan.
  7. Top with sour cream, bacon, and green onions. Serve warm.
