  • 4 slices sturdy bread Use crusty sourdough or artisan white for the best crunch.
  • 4 oz Swiss cheese Real Swiss cheese recommended, Gruyere is a close second.
  • 1 cup fresh mushrooms, sliced White button or baby bella mushrooms work well.
  • 2 tbsp butter For grilling, avoid margarine.
  • to taste salt For seasoning the mushrooms.
  • to taste pepper For seasoning the mushrooms.
Optional Add-ins
  • to taste garlic Can be added while sautéing mushrooms for extra flavor.
  • to taste fresh thyme Can be added while sautéing mushrooms.
  • pinch onion powder Optional, for added flavor.
  • splash Worcestershire sauce Optional, for added flavor.
  • as desired ham or roasted turkey Optional protein addition, ensure it doesn’t overpower the cheese.

Method
 

Preparation
  1. Clean and slice the fresh mushrooms.
  2. In a pan, melt the butter over medium heat.
  3. Add the sliced mushrooms, seasoning with salt and pepper, then cook until golden and crispy.
Assembling the Sandwich
  1. Butter one side of each bread slice.
  2. Layer the Swiss cheese on the unbuttered side of one slice.
  3. Add the sautéed mushrooms on top of the cheese, then place another slice of bread on top, buttered side up.
Cooking
  1. Return the sandwich to the pan and cook on medium-low, pressing lightly to toast the bread without squeezing out the cheese.
  2. Flip once the first side is deep golden brown and cook the other side until similarly toasted, listening for that sizzle.
Serving
  1. Let the sandwich rest for a minute before cutting.
  2. Enjoy with a cozy blanket and a bowl of soup, if desired.
