  • 2 cups Shredded rotisserie chicken Use more if you’re hungry
  • 2 cups Cooked white or brown rice Cauliflower rice is a substitute
  • 1 cup Bottled sweet chili sauce Get the good stuff, store-brand is also acceptable
Toppings
  • 1 cup Sliced cucumbers Adds crunch and fresh taste
  • 1 cup Shredded carrots or mixed coleslaw Bagged is fine
  • 1/4 cup Sliced jalapeños Optional
  • 1 bunch Fresh cilantro For garnish
  • 2 pieces Lime wedges For squeezing over the bowls
  • 2 tablespoons Toasted sesame seeds For sprinkling
  • 1/2 cup Chopped peanuts Optional topping
  • 1 piece Avocado Optional topping
  • 1 cup Diced bell peppers Optional topping

Method
 

Preparation
  1. Shred or pull apart the leftover rotisserie chicken.
  2. Heat the chicken in a skillet for a quick warm-up.
  3. Mix the warm chicken with your favorite sweet chili sauce.
  4. Spoon the chicken mixture over warm rice or quinoa.
  5. Add fresh toppings like cucumbers, shredded carrots, or sliced jalapeños.
  6. Finish with a squeeze of lime and sprinkle with sesame seeds.

Notes

Serve warm or try cold for lunch. Double the toppings for extra crunch. Drizzle extra sweet chili sauce before serving.
