  • 2 cups Shredded rotisserie chicken Use more if you’re hungry
  • 2 cups Cooked white or brown rice Cauliflower rice can be used as an alternative
  • 1/2 cup Bottled sweet chili sauce Get the good stuff
Toppings
  • 1 cup Sliced cucumbers Adds crunch and fresh taste
  • 1 cup Shredded carrots or mixed coleslaw Bagged is fine
  • 1/2 Sliced jalapeños Optional, but recommended
  • 1 tablespoon Fresh cilantro For garnish
  • 2 wedges Lime Squeeze over the top
  • 1 tablespoon Toasted sesame seeds For sprinkling
  • 1/4 cup Chopped peanuts Optional topping
  • 1 whole Avocado Optional topping
  • 1 cup Diced bell peppers Optional topping

Method
 

Preparation
  1. Shred or pull apart leftover rotisserie chicken.
  2. In a skillet, warm the shredded chicken over medium heat.
  3. Mix the warm chicken with sweet chili sauce until well coated.
  4. Prepare your rice or quinoa as per instructions.
  5. Assemble the bowls by adding the rice/quinoa to the base.
  6. Spoon the sweet chili chicken mixture over the rice/quinoa.
  7. Top with cucumbers, carrots, jalapeños, cilantro, lime, and sesame seeds.

Notes

These bowls are quick to prepare. Serve warm or cold for lunch. Double the toppings for extra crunch and drizzle more sweet chili sauce before eating for added flavor.
