  • 1/2 cup Melted butter Adds flavor instead of oil.
  • 1 cup Yogurt For moisture; can use sour cream.
  • 1 teaspoon Vanilla extract Adds depth of flavor.
  • 2 cups Fresh peaches, sliced Ripe but not mushy; keep skin on.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs, yogurt, vanilla, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Gently fold in fresh peach slices, reserving a handful for topping.
  6. Pour the batter into a greased pan and add reserved peach slices on top.
  7. Bake for 40-45 minutes or until golden and a cake tester comes out clean.
  8. Let the cake cool for at least 15 minutes before slicing.
  9. Optionally dust with powdered sugar before serving.

Notes

Don’t stress about making the batter perfectly smooth; lumps are okay. You can add a sprinkle of cinnamon or swap in nectarines for a twist. Allow the cake to rest after baking for the best slices.
