- Cut the corn off the cob and place it in a large bowl.
- Add halved cherry tomatoes, chopped red onion, and cilantro into the bowl.
- Squeeze fresh lime juice over the mixture.
- Drizzle with olive oil and season with salt and pepper to taste.
- Gently fold in the diced avocado last to prevent it from mushing.
Notes
Best enjoyed fresh, but can be stored for up to a day in the fridge. Mix ingredients without the avocado ahead of time, and add the avocado before serving to keep it from browning.
