Preparation
- Preheat the oven to 350°F (175°C).
- Line a square pan with parchment paper.
- In a bowl, mix crushed graham crackers, melted butter, and sugar.
- Press the mixture into the bottom of the lined pan.
- Bake for 8 minutes, then let it cool.
Filling
- In a bowl, blend cream cheese and sugar until fluffy.
- Add vanilla extract and eggs, mix until smooth.
- Pour the mixture over the cooled crust.
- Swirl in strawberry bits and/or drizzle with jam.
Baking
- Bake for about 30 minutes or until set but not browned.
- Cool completely before slicing into bars.
Notes
Refrigerate leftovers for up to 5 days. These bars freeze well, just slice and wrap individually. Thaw in the fridge or enjoy frozen for a treat.
