Delicious, easy-to-make strawberry cheesecake bars perfect for any occasion. A crowd-pleaser that's simpler than a full cheesecake and incredibly tasty!

Ingredients
  

For the crust
  • 2 cups crushed graham crackers Or digestive biscuits.
  • 1/2 cup melted butter Unsalted.
  • 1/4 cup granulated sugar For sweetness.
For the filling
  • 16 oz cream cheese Full-fat, softened.
  • 1 cup granulated sugar Keep it classic, no brown sugar.
  • 2 large eggs Large eggs, room temperature.
  • 1 tsp vanilla extract Use real vanilla for best flavor.
  • 2 cups fresh strawberries Mashed or sliced, can use frozen.
  • 1 tbsp strawberry jam Optional, for swirling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line a square pan with parchment paper.
  3. In a bowl, mix crushed graham crackers, melted butter, and sugar.
  4. Press the mixture into the bottom of the lined pan.
  5. Bake for 8 minutes, then let it cool.
Filling
  1. In a bowl, blend cream cheese and sugar until fluffy.
  2. Add vanilla extract and eggs, mix until smooth.
  3. Pour the mixture over the cooled crust.
  4. Swirl in strawberry bits and/or drizzle with jam.
Baking
  1. Bake for about 30 minutes or until set but not browned.
  2. Cool completely before slicing into bars.

Notes

Refrigerate leftovers for up to 5 days. These bars freeze well, just slice and wrap individually. Thaw in the fridge or enjoy frozen for a treat.
