Ingredients
  

For the crust
  • 1 cup crushed graham crackers or digestive biscuits
  • 1/4 cup melted butter for binding
  • 2 tablespoons granulated sugar to sweeten the crust
For the filling
  • 8 oz cream cheese full-fat for best texture
  • 1/2 cup granulated sugar for sweetness
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract preferably real for best flavor
  • 1 cup fresh strawberries sliced or mashed
  • 1 tablespoon strawberry jam optional for swirling in

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a square baking pan with parchment paper.
  2. In a bowl, mix together crushed graham crackers, melted butter, and sugar. Press this mixture into the bottom of the prepared pan.
  3. Bake the crust for 8 minutes and let it cool.
Filling
  1. In a separate bowl, blend the cream cheese and sugar until fluffy.
  2. Add in the vanilla extract and eggs, mixing until no streaks remain.
  3. Pour the cream cheese mixture over the cooled crust.
  4. Swirl in the strawberry bits or drizzle with jam if desired.
  5. Bake for 30 minutes, until set but not browned. Gently shake the pan; if it barely jiggles, it’s done.
Cooling
  1. Let the bars cool completely before slicing to ensure clean edges.

Notes

These bars can be stored in the refrigerator for 4-5 days. They also freeze well; wrap individually and freeze for up to 2 months. Let thaw in the fridge before enjoying.
