Ingredients
  

For the Shrimp and Tortillas
  • 1 lb peeled, raw shrimp Use wild-caught for better flavor.
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder Add more for extra flavor.
  • 1 tsp salt
  • 1 tbsp olive oil
  • 8 pieces small corn tortillas Corn is preferred for flavor.
For the Zesty Avocado Cream
  • 1 ripe avocado Ensure it’s ripe, not hard.
  • 1 tbsp lime juice
  • 1 cup thick Greek yogurt Use as a lighter alternative to mayo.
  • 1 tsp garlic powder
  • 1/4 cup chopped cilantro Can substitute with parsley.
  • to taste hot sauce Optional, to taste.
For Toppings
  • 1 cup shredded green cabbage For crunch.
  • 1 cup thin-sliced carrots
  • 1/2 cup crumbled queso fresco or cotija cheese For flavor enhancement.
  • 1 lime for squeezing Adds freshness.

Method
 

Preparation of Shrimp
  1. In a bowl, toss shrimp with chili powder, smoked paprika, garlic powder, salt, and olive oil. Mix well.
  2. Heat a pan until hot. Add shrimp in a single layer and cook for 2-3 minutes on each side until pink and juicy.
Preparation of Avocado Cream
  1. In a bowl, mash together avocado, lime juice, Greek yogurt, garlic powder, and cilantro. Mix until smooth.
Assembly of Tacos
  1. Warm the corn tortillas in a hot skillet until just toasty. Spread avocado cream over each tortilla.
  2. Layer the cooked shrimp on the tortillas followed by the shredded cabbage, carrots, and cheese.
  3. Squeeze fresh lime juice on top and add additional toppings as desired.

Notes

You can prep the zesty avocado cream in advance as it gets better after sitting in the fridge. For extra spice, adjust the seasoning or add cayenne pepper.
