  • 1 cup heavy cream Use half-and-half for a lighter option.
  • 1/2 cup freshly grated Parmesan cheese Avoid pre-grated cheese for better melting.
  • 1 medium lemon, juiced Adds brightness to the dish.
  • 1/2 cup white wine or chicken broth Wine is optional; broth works well.
  • 12 ounces pasta (linguine, spaghetti, or other) Cook pasta according to package instructions.
  • 2 tablespoons olive oil For cooking the shrimp.
  • Salt to taste salt To season the dish.
  • Pepper to taste black pepper To season the dish.
  • Optional red pepper flakes or sun-dried tomatoes For additional flavors.

Method
 

Preparation
  1. Cook the pasta according to package instructions, then set aside.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
Cooking the Shrimp
  1. Add the shrimp to the skillet and season with salt and pepper. Sear for 1-2 minutes until shrimp turn pink, then remove from the skillet.
  2. Deglaze the pan with white wine or chicken broth, scraping up the bits from the bottom.
  3. Lower the heat and stir in the heavy cream and Parmesan cheese until melted and smooth.
Combining and Serving
  1. Return the shrimp to the pan and toss to coat in the sauce.
  2. Add lemon juice and adjust seasoning if needed.
  3. Serve the shrimp scampi over cooked pasta, garnished with fresh parsley and a squeeze of lemon.

Don’t overcook the shrimp; they cook quickly. Prepare all ingredients before starting to ensure timely cooking. Serve hot with garlic bread for a delightful meal.
