Ingredients
  

For the Chicken
  • 1 lb chicken breasts or thighs Thighs will stay juicier.
For the Sauce
  • 1/2 cup peanut butter Use a regular, non-fancy variety.
  • 1/4 cup soy sauce Coconut aminos can be used for a gluten-free option.
  • 2 tbsp honey
  • 1 juice of lime Fresh lime juice is recommended.
  • 1/4 tsp red pepper flakes Adjust to taste for spiciness.
For Serving
  • 3 cups cooked rice White or brown rice works well.
  • 1 cup chopped vegetables Broccoli, green beans, or others as desired.
  • 1/4 cup cashews For topping, optional.

Method
 

Preparation
  1. In a bowl, mix together the peanut butter, soy sauce, honey, lime juice, and red pepper flakes to create the sauce.
  2. Chop the chicken into bite-sized pieces and season with salt and pepper.
  3. Prepare rice according to package instructions.
Cooking
  1. In a large skillet over medium heat, cook the chicken until browned and cooked through, about 8-10 minutes.
  2. Add chopped vegetables to the skillet and cook for an additional 3-5 minutes.
  3. Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly.
  4. Let it simmer on low for a few minutes until the sauce is heated through.
Serving
  1. Serve the chicken and sauce over rice, garnishing with chopped cashews if desired.

Notes

This dish can be adjusted for heat by controlling the amount of red pepper flakes. Leftovers are great the next day and can even be enjoyed cold.
