  • 1 large rotisserie chicken, shredded Use any leftover chicken for this recipe.
  • 3 cups pasta of choice Penne, rigatoni or any preferred pasta.
  • 2 tablespoons olive oil For sautéing onions and garlic.
Flavor Enhancers
  • 2 cloves garlic, minced Enhances the flavor of the dish.
  • 1 medium onion, chopped For additional aromatics.
  • 1 cup sauce (Alfredo, tomato, or cream) Choose according to preference.
  • 1 teaspoon Italian herbs For seasoning.
  • to taste salt and pepper To season the dish.
  • 1 tablespoon lemon juice To brighten flavors.
Optional Add-ins
  • 1 cup spinach or peas For added nutrition and color.
  • 1/4 cup parmesan cheese, grated For topping.
  • 1/2 cup sun-dried tomatoes For added flavor.

Method
 

Preparation
  1. Shred the rotisserie chicken and set aside.
  2. Cook pasta according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until fragrant.
  3. Stir in shredded chicken and sauce. Mix thoroughly.
  4. Add cooked pasta, ensuring it absorbs the sauce.
  5. Stir in seasonings and optional add-ins.
  6. Cook for an additional 5 minutes until heated.
Serving
  1. Serve warm, garnished with herbs and extra cheese if desired.

Notes

Leftover pasta can be stored in an airtight container in the fridge for up to three days. Reheat gently with a splash of liquid. Freezing is also an option for longer storage.
