  • 1 lb steak (sirloin, ribeye, or pre-sliced beef) Use leftover roast beef in a pinch.
  • 2 medium bell peppers Use a mix of colors if desired.
  • 1 medium onion Thinly sliced.
  • 1 cup mushrooms Sliced (optional for mushroom haters).
  • 4 slices provolone cheese Substitute with mozzarella or white American cheese.
  • 2 tbsp butter or oil For the skillet.

Preparation
  1. Heat a skillet over medium-high heat and add butter or oil.
  2. Add the sliced steak and season with salt and pepper. Cook rapidly but do not overcook.
  3. Remove the steak from the skillet to prevent it from becoming rubbery.
  4. In the same skillet, add the bell peppers, onions, and mushrooms. Sauté until softened and slightly browned.
  5. Return the cooked steak to the skillet with the vegetables.
  6. Place slices of cheese on top and cover with a lid or a baking sheet. Allow cheese to melt for 1-2 minutes.
  7. Scoop the mixture into bowls and serve hot.

Notes

For a low-carb option, consider serving over cauliflower rice. You can also add jalapenos for a spicy kick, or mix in baby spinach while cooking to sneak in extra greens. Use pre-sliced vegetables to save time.
