  • 1 piece pie crust (ready-made or homemade) Store-bought is acceptable for convenience.
  • 3-4 pieces juicy peaches, peeled and sliced Choose the ripest peaches for the best flavor.
  • 8 oz cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1/2 cup granulated sugar Adjust according to the sweetness of peaches.
  • 1 piece large egg Use whichever eggs you have available.
  • 1 teaspoon vanilla extract Vanilla enhances the flavor of the filling.
  • 2 tablespoons all-purpose flour Helps thicken the filling.
  • a pinch salt Balances the sweetness.
  • optional dash of cinnamon Adds a nice flavor if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Slice the peaches and toss them with a squeeze of lemon and sugar in a bowl.
  3. In another bowl, mix the cream cheese, sugar, vanilla, egg, flour, and salt until creamy and well combined.
  4. Pour the cream filling over the peaches in the pie crust, and layer more peaches if desired.
Baking
  1. Bake the pie in the preheated oven until the top is set and slightly golden, about 30-40 minutes.
  2. Remove from oven and let cool for at least 2 hours before slicing.

Notes

This pie is better after a few hours of chilling in the fridge. You can experiment with different fruits or toppings for variations. Consider serving it with a scoop of ice cream or whipped cream.
