  • 1 piece pie crust ready-made or homemade
  • 3-4 juicy peaches, peeled and sliced Choose the ripest peaches
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar Adjust based on peach sweetness
  • 1 large egg Best if large
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour Helps the filling set
  • a pinch salt
  • a dash cinnamon Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Prepare your pie crust by placing it in a pie dish.
  3. Slice the peaches and toss them with lemon juice and sugar.
  4. In a mixing bowl, combine cream cheese, sugar, vanilla, egg, flour, salt, and cinnamon until smooth.
  5. Pour the cream mixture over the peaches in the pie crust.
  6. Bake in the preheated oven for about 45 minutes, until the top is set and slightly golden.
  7. Allow the pie to cool before slicing.

Notes

Chill the pie in the fridge for a few hours to enhance flavor. Serve cold, room temperature, or slightly warm. It can also be topped with a crumble for added texture.
