Ingredients
  

Cookie Base
  • 1 cup Soft butter Salted or unsalted
  • 3/4 cup Light brown sugar
  • 1/4 cup White sugar A small amount for extra crisp
  • 1 large Egg
  • 1 teaspoon Vanilla extract For a warm, homey vibe
  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon Optional but recommended
  • 1/4 teaspoon Nutmeg Optional
  • 1 tablespoon Cornstarch Keeps cookies soft and sturdy
Peach Filling
  • 2 cups Fresh peaches Peeled and chopped into tiny bits
Topping (Optional)
  • 1 tablespoon Turbinado sugar For a crunchy finish if desired

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop peaches into tiny bits and dab them with a towel to avoid sogginess.
  3. In a large bowl, cream the butter and sugars until smooth.
  4. Add the egg and vanilla extract and mix until blended.
  5. In a separate bowl, stir together flour, baking powder, salt, and spices.
  6. Gently fold the dry ingredients into the wet mixture.
  7. Carefully fold in the chopped peaches.
  8. Scoop dough onto a lined baking sheet without flattening.
  9. Optional: Press a few peach bits on top of each cookie.
Baking
  1. Bake in the preheated oven for 11-13 minutes until golden brown at the edges.
  2. Let cool on the tray for a few minutes before transferring to a wire rack.

Notes

Best enjoyed warm. Can be paired with vanilla ice cream or coffee. Store in an airtight container for up to three days.
