  • 1 pound salmon fillets, boneless Fresh or frozen, thawed if frozen.
  • 12 ounces pasta (penne, farfalle, or spaghetti)
  • 1 cup frozen peas Regular or frozen green peas.
  • 1 cup cream or half-and-half For a velvety sauce.
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/2 cup white wine Optional.
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest For garnish.

Method
 

Preparation
  1. Prepare the salmon by pan-searing in hot olive oil until golden and cooked through, about 3-4 minutes per side.
  2. Let the salmon rest, then flake with a fork.
  3. Cook the pasta according to package instructions until al dente.
  4. In a separate pan, heat olive oil and sauté the chopped onion and minced garlic until fragrant.
Cooking
  1. Add the white wine (if using) and let simmer for a minute.
  2. Stir in the cream and cooked pasta, adding a splash of pasta water if needed to loosen the sauce.
  3. Gently fold in the flaked salmon and frozen peas, cooking until the peas are just heated through.
Serving
  1. Serve immediately, garnished with lemon zest.

Notes

For variations, you can use green beans instead of peas, smoked salmon, or make it vegetarian by omitting fish. Serve with garlic bread or a light salad for a complete meal.
