Main Ingredients
  • 3 cups cooked shredded chicken Use leftover or rotisserie chicken
  • 8 oz cream cheese, softened
  • 1 can cream of chicken soup For a lower sodium option, choose low sodium soup
  • 1 cup sour cream
  • 1 cup shredded cheese Optional additional cheese for topping
Topping
  • 1 cup buttery crackers, crushed Ritz or similar type of crackers

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, cream cheese, cream of chicken soup, sour cream, and half of the shredded cheese. Mix until well combined.
  3. Transfer the mixture to a greased baking dish.
  4. Spread the crushed buttery crackers evenly over the top.
Baking
  1. Bake in the preheated oven for 30 minutes, or until bubbly and golden.
  2. Keep an eye on the cracker topping to ensure it doesn't burn.

Notes

Feel free to add frozen veggies for a nutrition boost. If using different types of crackers or adding more liquid, adjust accordingly. Leftovers can be stored in the fridge for a couple of days and reheated in the microwave or oven.
