Ingredients
  

For the Bowl
  • 1 lb Steak (flank, skirt, or sirloin) Can use leftover steak or grilled chicken.
  • 2 cups Cooked grain (rice, quinoa, or farro) Brown rice adds more chew.
  • 1 cup Chopped cucumbers Adds crunch.
  • 1 cup Cherry tomatoes Roma tomatoes can be used instead.
  • 1 small Red onion (thinly sliced) Use sparingly to avoid overpowering.
  • 1/2 cup Kalamata olives Can skip if not preferred.
  • 1/2 cup Feta cheese Goat cheese can also be used.
  • 1/2 cup Hummus Adds creaminess.
  • 2 cups Lettuce (spinach, arugula, or romaine)
For the Dressing
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 clove Garlic (minced)
  • 1 tsp Oregano

Method
 

Cooking the Steak
  1. Season the steak with salt and pepper and cook it to medium-rare either pan-seared, grilled, or baked until juicy.
  2. Let the steak rest before slicing.
Assembling the Bowl
  1. Prepare the cooked grain in a bowl.
  2. Chop cucumbers, tomatoes, and red onion.
  3. Layer grains and greens at the bottom of each bowl.
  4. Top with sliced steak, crunchy veggies, Kalamata olives, crumbled feta, and a scoop of hummus.
Dressing the Bowl
  1. Drizzle the dressing over the assembled bowl or serve it on the side.

Notes

Leftovers can be stored in separate containers to keep components fresh. Dressing can be kept on the side to avoid sogginess.
