  • 1 lb Flank, skirt, or sirloin steak Cooked to medium-rare for juiciness
  • 2 cups Cooked grains (rice, quinoa, or farro) Brown rice gives more chew
  • 1 cup Chopped cucumbers For crunch
  • 1 cup Cherry tomatoes Or Roma, whatever's ripe
  • 0.5 cup Thinly sliced red onion To enhance flavor without overpowering
  • 0.5 cup Kalamata olives For a salty hit
  • 0.5 cup Feta cheese Or goat cheese as a substitute
  • 0.5 cup Hummus Adds creaminess
  • 4 cups Lettuce (spinach, arugula, or Romaine) For base
Dressing
  • 3 tbsp Olive oil
  • 1 lemon Juice of lemon
  • 2 cloves Garlic, minced For flavor
  • 1 tsp Oregano Dried or fresh

Method
 

Preparation
  1. Cook the steak using your preferred method (pan-seared, grilled, or baked). Season with salt and pepper and cook to medium-rare.
  2. While the steak is resting, prepare your grain according to instructions.
  3. Chop cucumbers, tomatoes, and red onion.
Assembly
  1. Layer the cooked grains and greens in each bowl.
  2. Top with sliced steak, crunchy veggies, Kalamata olives, crumbled feta, and a scoop of hummus.
  3. Drizzle the homemade dressing over the top.

Notes

Leftovers can be stored separately to avoid sogginess. Salad components should be kept fresh by storing in separate containers.
