  • 2 tablespoons olive oil Use extra for drizzling before serving.
  • 1 medium onion, chopped
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 cups bell peppers, sliced Mix of colors for flavor and presentation.
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice Use fresh lemon juice for best flavor.
  • 1/2 cup feta cheese, crumbled Add at the end for a gourmet touch.
  • 1/2 cup olives, optional Add if available, for extra flavor.

Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken thighs or breasts; cook until browned on all sides.
  3. Add chopped onion, cherry tomatoes, garlic, and bell peppers to the skillet; toss to combine.
  4. Stir in dried oregano, paprika, and lemon juice; mix well.
  5. Cook until chicken is cooked through and vegetables are tender, about 10-15 minutes.
  6. Top with feta and olives before serving.

Notes

Marinate chicken in olive oil, lemon, and oregano for better flavor. Avoid overcrowding the skillet for a golden crust. Serve with rice, couscous, or crusty bread.
