Preparation
- Dice up the ripe mango and place it in a sturdy glass.
- Add a handful of mint leaves and squeeze in the juice of half a lime.
- Using a muddler or the back of a spoon, mash everything together well to release the juices and mint aroma.
- Sprinkle in about one teaspoon of sugar and pour in 2 oz of white rum.
- Stir to ensure the sugar dissolves.
- Fill the glass with crushed ice and top off with club soda.
- Give it one last stir, taste, and adjust lime or sweetness if needed.
Notes
For a non-alcoholic version, skip the rum and substitute with coconut water or extra soda water. Garnish with a sprig of mint and a slice of mango to enhance presentation. If making in bulk, muddle the ingredients and add soda water and ice just before serving to maintain fizz.
