Fish Ingredients
  • 4 pieces tilapia fillets Super easy to find
  • 2 tablespoons olive oil
  • 1 big lemon, juice and zest Use 2 if the lemon is small
  • 3 cloves garlic, minced The more, the merrier
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Vegetable Ingredients
  • 1 pound fresh green beans, trimmed Snap off ends if desired
  • fresh parsley, optional For garnish

Method
 

Preparation
  1. Preheat your oven to 400 degrees F.
  2. Line a baking tray with parchment paper.
  3. Place the tilapia fillets on the tray.
  4. Drizzle olive oil over the fish and squeeze the lemon juice on top.
  5. Sprinkle minced garlic, salt, pepper, and lemon zest over the fillets.
  6. For extra flavor, refrigerate for 10 minutes if you have time.
  7. Toss the trimmed green beans around the tilapia fillets on the tray.
Cooking
  1. Bake in the preheated oven for about 12 minutes until the fish flakes easily.

Notes

Leftovers can be stored in an airtight container and reheated gently in a skillet with a splash of water. Fresh lemon juice added when reheating enhances the flavors.
