Preparation
- Preheat the oven to 350 degrees F (175 degrees C).
- Lay out the slices of roast beef flat on a clean surface.
- Stack a small amount of sautéed peppers and onions on each slice.
- Top with shredded cheese.
- Roll each slice from one end to the other, keeping it nice and tight.
- Secure with a toothpick if necessary.
Baking
- Place the roll ups in a baking dish and sprinkle with grated parmesan and almond flour if using.
- Bake in the preheated oven for about 10 minutes, or until the cheese is bubbly and golden.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
