  • 8 slices roast beef slices Deli-sliced or leftovers from a roast
  • 1 cup sautéed bell peppers and onions Use any combination of colors
  • 1 cup shredded cheese Cheddar, provolone, or mozzarella are good options
  • 1/4 cup grated parmesan cheese For topping
  • 2 tablespoons almond flour Optional, for breading

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Lay out the slices of roast beef flat on a clean surface.
  3. Stack a small amount of sautéed peppers and onions on each slice.
  4. Top with shredded cheese.
  5. Roll each slice from one end to the other, keeping it nice and tight.
  6. Secure with a toothpick if necessary.
Baking
  1. Place the roll ups in a baking dish and sprinkle with grated parmesan and almond flour if using.
  2. Bake in the preheated oven for about 10 minutes, or until the cheese is bubbly and golden.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
