- Preheat oven to 400°F and line baking sheets with parchment paper.
- Arrange cheese into 8 circles; bake for 6–8 minutes until edges are golden.
- Whisk dressing ingredients (mayo, ketchup, horseradish, Swerve, Worcestershire, paprika) while cheese bakes.
- Cool cheese for 1 minute; top with corned beef, dry sauerkraut, and dressing.
- Fold cheese circles while still warm; rest for 5 minutes until crispy.

1. Parchment is mandatory: The cheese will fuse to foil or a bare pan; high-quality parchment paper is required for a clean release. 2. Squeeze the Kraut: Moisture is the enemy of a crispy shell. Squeeze the sauerkraut in a towel until bone-dry before assembly. 3. The 60-Second Rule: Roll the cheese exactly one minute after it leaves the oven; any longer and it becomes too brittle to fold.
