Ingredients
  

  • 2 cups shredded Swiss cheese
  • 1/2 lb sliced corned beef deli meat
  • 1 cup sauerkraut
  • 1/4 cup mayo 1.5 tbsp sugar-free ketchup, 1 tbsp horseradish sauce
  • 1 tsp Worcestershire 2 tsp Swerve (confectioner's), 1 pinch paprika

Method
 

  1. Preheat oven to 400°F and line baking sheets with parchment paper.
  2. Arrange cheese into 8 circles; bake for 6–8 minutes until edges are golden.
  3. Whisk dressing ingredients (mayo, ketchup, horseradish, Swerve, Worcestershire, paprika) while cheese bakes.
  4. Cool cheese for 1 minute; top with corned beef, dry sauerkraut, and dressing.
  5. Fold cheese circles while still warm; rest for 5 minutes until crispy.

Notes

1. Parchment is mandatory: The cheese will fuse to foil or a bare pan; high-quality parchment paper is required for a clean release. 2. Squeeze the Kraut: Moisture is the enemy of a crispy shell. Squeeze the sauerkraut in a towel until bone-dry before assembly. 3. The 60-Second Rule: Roll the cheese exactly one minute after it leaves the oven; any longer and it becomes too brittle to fold.
