  • 3 cups shredded cooked chicken Rotisserie makes it easier.
  • 2 cups cauliflower rice Squeeze out excess water.
  • 8 oz cream cheese Softened.
  • 1 cup heavy cream Add a splash more if needed.
  • 1 cup parmesan cheese Grated.
  • 3 cloves garlic Minced.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup mozzarella cheese For topping.
  • 2 tablespoons fresh parsley Chopped, for garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix cream cheese, heavy cream, grated parmesan, minced garlic, salt, black pepper, and Italian seasoning until smooth.
  3. Fold in the shredded chicken and cauliflower rice until evenly combined.
  4. Transfer the mixture to a greased casserole dish and sprinkle with mozzarella cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until hot and bubbly.
  2. Optional: Broil for 2 minutes for an extra toasty cheese top.
  3. Let it rest for a few minutes before serving. Garnish with extra parmesan and parsley.

Notes

Make sure to squeeze out any extra water from the cauliflower rice to avoid a watery casserole. Don't overcook the chicken beforehand, and taste the sauce before mixing everything together.
