- Fold in the shredded chicken and cauliflower rice until evenly combined.
- Transfer the mixture to a greased casserole dish and sprinkle with mozzarella cheese.
Baking
- Bake in the preheated oven for 25-30 minutes, or until hot and bubbly.
- Optional: Broil for 2 minutes for an extra toasty cheese top.
- Let it rest for a few minutes before serving. Garnish with extra parmesan and parsley.
Notes
Make sure to squeeze out any extra water from the cauliflower rice to avoid a watery casserole. Don't overcook the chicken beforehand, and taste the sauce before mixing everything together.
