Ingredients
  

  • 4 cups cauliflower rice
  • 2 tbsp rice vinegar 1 tbsp keto sweetener, 0.5 tsp salt
  • 8 oz crab meat real or imitation
  • 1 cucumber 1 avocado
  • 2 tbsp soy sauce sriracha, sesame seeds, nori strips

Method
 

  1. Cook/Steam cauliflower rice and drain well.
  2. Season warm cauliflower with vinegar, sweetener, and salt.
  3. Slice cucumber and dice avocado.
  4. Divide "rice" into bowls and layer with crab, cucumber, and avocado.
  5. Drizzle with soy sauce and spicy mayo; garnish with nori and sesame seeds.

Notes

1. Dry the Cauliflower: Pat the steamed cauliflower rice dry to ensure the seasoning sticks and the texture remains fluffy. 2. Real vs. Imitation: For strict keto, opt for real lump crab meat to avoid the starches in imitation crab. 3. The Rice Vinegar: Ensure you use unseasoned rice vinegar, as the "seasoned" variety usually contains added sugar.
