Main Ingredients
  • 2 cups pecans, finely chopped Finely chopped for best texture.
  • 1.5 cups self-rising flour You can substitute with all-purpose flour plus a bit of baking powder.
  • 1.5 cups sugar Regular granulated sugar.
  • 1 cup light brown sugar Adds a caramelly flavor.
  • 4 large eggs Room temperature preferred.
  • 1 cup melted butter Unsalted is preferred.
  • 1 tsp vanilla extract For added flavor.
  • 0.5 cups honey Choose runny honey for better mixing.
  • 1 pinch salt
For the Glaze
  • 0.25 cups soft butter
  • 2 tbsp honey

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line a loaf pan with parchment paper if desired.
  2. In a large bowl, combine flour, both sugars, and chopped pecans.
  3. In another bowl, whisk together the eggs, melted butter, honey, salt, and vanilla.
  4. Mix the wet ingredients with the dry until no dry flour spots remain, being careful not to over-mix.
  5. Pour the batter into the prepared loaf pan.
Baking
  1. Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted in the center comes out mostly clean.
  2. Once out of the oven, immediately spread the honey butter glaze over the warm bread.

Notes

For best results, use fresh pecans and avoid overmixing. If the top browns too quickly, cover with foil for the last 15 minutes. Let cool for neat slicing. This bread tastes better the next day.
