Main Ingredients
  • 4 cups broccoli, chopped Chop smaller for quicker cooking.
  • 1 cup chicken broth Add more if the soup is too thick.
  • 1 cup cheddar cheese, shredded Can use other cheeses if desired.
  • 1 cup Greek yogurt or cottage cheese Add off heat to prevent curdling.
  • 1 tablespoon olive oil For sautéing.
  • 1 clove garlic, minced Optional, for flavor.

Method
 

Preparation
  1. In a pot, heat olive oil over medium heat and sauté garlic until fragrant.
  2. Add chopped broccoli and cook for about 5 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer until broccoli is tender, about 15 minutes.
Finishing Touches
  1. Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches.
  2. Stir in cheddar cheese and mix until melted.
  3. Turn off the heat and fold in Greek yogurt or cottage cheese.

Notes

Let the soup cool before storing in airtight containers. Can freeze, but add dairy when reheating. Always taste before serving and adjust seasoning as needed.
