  • 1/2 cup cooked sausage crumbled
  • 1/2 cup cooked bacon crumbled
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • Spices: 1/2 tsp salt 1/4 tsp black pepper

Method
 

  1. Whisk eggs, milk, salt, and pepper until frothy.
  2. Sauté the egg mixture in olive oil over medium heat until soft curds form.
  3. Stir in sausage, bacon, and cheese until cheese is just melted.
  4. Warm tortillas until pliable.
  5. Divide filling into 4 portions; spoon into tortillas and roll tightly.
  6. Serve warm or prep for freezing.
