Ingredients
  

  • 4 small chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp each: garlic powder oregano, basil
  • Salt black pepper, red pepper flakes
  • 2 cups cooked rice/quinoa
  • 2 cups grape tomatoes
  • 2 cups cucumber diced
  • 4 cups romaine lettuce
  • 1 cup red onion
  • 1/2 cup feta
  • 1 cup Greek yogurt
  • 1/2 cucumber grated/squeezed
  • 1 garlic clove
  • Fresh dill

Method
 

  1. Whisk together olive oil, lemon juice, honey, and spices to create the marinade.
  2. Pound chicken breasts to a uniform thickness and marinate for at least 30 minutes.
  3. Grate half a cucumber, squeeze out all excess moisture with a paper towel, and mix with yogurt, garlic, lemon, and dill to make tzatziki.
  4. Cook your grain base (rice or quinoa) and chop the fresh tomatoes, cucumber, onion, and lettuce.
  5. Air Fry the chicken at 380°F for 10 minutes (flipping halfway) until the internal temperature reaches 165°F.
  6. Rest the chicken for 5 minutes, then slice into thin strips.
  7. Assemble each bowl with a layer of grains and lettuce, followed by vegetables, sliced chicken, a dollop of tzatziki, and a sprinkle of feta.

Notes

1. Squeeze the grated cucumber thoroughly in a paper towel to ensure the tzatziki stays thick and creamy. 2. Pound the chicken breasts to an even thickness to prevent the thinner ends from drying out in the air fryer. 3. Let the chicken rest for 5 full minutes before slicing to keep the meat juicy and tender.
