Ingredients
  

Main Ingredients
  • 4 pieces chicken breasts or thighs Use frozen if needed
  • 1 cup salsa For a quick taco night meal
  • 1 tablespoon olive oil For added flavor
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon pepper Adjust to taste
Vegetables (Optional)
  • 1 cup broccoli Can swap for any vegetable
  • 1 medium bell pepper For added sweetness

Method
 

Preparation
  1. Place chicken at the bottom of the slow cooker.
  2. Add salsa, olive oil, salt, and pepper on top.
  3. If using, add vegetables on top.
Cooking
  1. Cover and cook on low for 4 hours or high for 2 hours.
  2. For a thicker sauce, uncover in the last 30 minutes and stir in some cornstarch.
Serving
  1. Serve with crusty bread or over rice.

Notes

Store leftovers in airtight containers for up to four days in the fridge. Freeze portions in zip-top bags for easy lunches later.
