Preparation
- Place chicken at the bottom of the slow cooker.
- Add salsa, olive oil, salt, and pepper on top.
- If using, add vegetables on top.
Cooking
- Cover and cook on low for 4 hours or high for 2 hours.
- For a thicker sauce, uncover in the last 30 minutes and stir in some cornstarch.
Serving
- Serve with crusty bread or over rice.
Notes
Store leftovers in airtight containers for up to four days in the fridge. Freeze portions in zip-top bags for easy lunches later.
