Main Ingredients
  • 3 pieces super ripe bananas The browner, the better.
  • 2 large eggs
  • 1/4 cup oil (your preference)
  • 1/3 cup honey or maple syrup Natural sweeteners.
  • 2 cups whole wheat flour For a healthier twist.
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Optional spice.
  • 1/2 teaspoon salt A pinch to enhance flavors.
Optional Add-ins
  • 1 cup chopped walnuts or pecans For added crunch.
  • 1/2 cup dark chocolate chips If you like chocolate.
  • 1/2 cup frozen blueberries For a fruity twist.
  • 2 tablespoons ground flaxseed or chia seeds For extra nutrition.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mash the ripe bananas and mix them with eggs, oil, and honey or maple syrup.
  3. In another bowl, combine the whole wheat flour, baking soda, cinnamon, and salt.
  4. Pour the dry ingredients into the wet ingredients and stir gently until just combined. Do not over-mix.
  5. Pour the mixture into a lined loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  2. Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For best results, use very dark bananas and do not over-mix the batter. You can freeze banana bread by wrapping it well and will last several weeks in the freezer. It thaws quickly at room temperature or can be warmed in a toaster.
