Ingredients
  

Roasted Chickpeas
  • 1 can canned chickpeas Drained and rinsed
  • 2 tablespoons olive oil For roasting
  • 1 teaspoon seasonings To taste (e.g., paprika, garlic powder)
Caprese Skewers
  • 1 cup cherry tomatoes For skewers
  • 1 cup mozzarella balls Bite-sized
  • 1 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar For drizzling
Mini Stuffed Peppers
  • 6 pieces mini sweet peppers Halved and seeded
  • 1 cup hummus For stuffing
Veggie Chips
  • 1 bag veggie chips Store-bought or homemade
Greek Yogurt Dip
  • 1 cup Greek yogurt Base for the dip
  • 2 tablespoons fresh herbs Chopped (e.g., dill, parsley)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) for the roasted chickpeas.
  2. Drain and rinse the canned chickpeas, then pat them dry.
  3. Toss chickpeas with olive oil and seasonings and spread on a baking sheet.
  4. Roast for 20-30 minutes until crispy.
  5. While the chickpeas are roasting, prepare the Caprese skewers by threading cherry tomatoes, mozzarella balls, and basil leaves onto toothpicks.
  6. Drizzle balsamic vinegar over the assembled skewers.
  7. Halve the mini sweet peppers and stuff them with hummus.
  8. Set out veggie chips and Greek yogurt dip next to your snacks.

Notes

Serve these appetizers with a variety of dips for extra flavor. Adjust seasonings to taste and feel free to include other fresh vegetables as desired.
