Preparation
- Preheat the oven to 400°F (200°C) for the roasted chickpeas.
- Drain and rinse the canned chickpeas, then pat them dry.
- Toss chickpeas with olive oil and seasonings and spread on a baking sheet.
- Roast for 20-30 minutes until crispy.
- While the chickpeas are roasting, prepare the Caprese skewers by threading cherry tomatoes, mozzarella balls, and basil leaves onto toothpicks.
- Drizzle balsamic vinegar over the assembled skewers.
- Halve the mini sweet peppers and stuff them with hummus.
- Set out veggie chips and Greek yogurt dip next to your snacks.
