Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken thighs You can mix with chicken breast if desired.
  • 1/4 cup olive oil For marinating the chicken.
  • 2 tablespoons lemon juice Freshly squeezed lemon juice enhances flavor.
  • 1 teaspoon oregano Dried oregano for seasoning.
  • 1 teaspoon garlic powder Adds depth to the marinade.
  • Salt to taste For seasoning.
For the Bowl
  • 4 cups cooked rice or greens Base of the bowl; can use cauliflower rice for a paleo version.
  • 1 cup tzatziki sauce Can be store-bought or homemade.
  • 1 cup chopped cucumbers For fresh topping.
  • 1 cup cherry tomatoes, halved Adds color and sweetness.
  • 1 cup sliced red onions For a zesty crunch.
  • 1/2 cup crumbled feta cheese Optional, for garnish.

Method
 

Marinating the Chicken
  1. In a large bowl, combine olive oil, lemon juice, oregano, garlic powder, and salt.
  2. Add chicken thighs, coating them well in the marinade. Cover and refrigerate for at least 30 minutes or up to overnight.
Cooking the Chicken
  1. Preheat a skillet over medium-high heat.
  2. Remove chicken from marinade and cook in the skillet for about 5-7 minutes on each side, or until cooked through.
  3. Let the chicken rest for a few minutes before slicing into bite-sized pieces.
Assembling the Bowls
  1. In each bowl, start with a base of rice or greens.
  2. Top with sliced chicken, tzatziki sauce, and your choice of veggies (cucumbers, cherry tomatoes, red onions).
  3. Garnish with crumbled feta, if desired.

Notes

This recipe is easily customizable. Feel free to add or swap toppings such as olives, additional roasted veggies, or protein alternatives like grilled tofu or lamb.
