Marinating the Chicken
- In a large bowl, combine olive oil, lemon juice, oregano, garlic powder, and salt.
- Add chicken thighs, coating them well in the marinade. Cover and refrigerate for at least 30 minutes or up to overnight.
Cooking the Chicken
- Preheat a skillet over medium-high heat.
- Remove chicken from marinade and cook in the skillet for about 5-7 minutes on each side, or until cooked through.
- Let the chicken rest for a few minutes before slicing into bite-sized pieces.
Assembling the Bowls
- In each bowl, start with a base of rice or greens.
- Top with sliced chicken, tzatziki sauce, and your choice of veggies (cucumbers, cherry tomatoes, red onions).
- Garnish with crumbled feta, if desired.
