Ingredients
  

For the Steak
  • 1 pound sirloin steak Room temperature, cut against the grain.
  • 2 tablespoons olive oil For searing the steak.

For the Pasta
  • 12 ounces linguine or fettuccine Cooked according to package instructions.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 cup grated parmesan cheese Can substitute with pecorino romano or a sharp white cheddar.
  • 4 cloves garlic Minced.
  • 1 cup cooked spinach or sautéed mushrooms For added nutrition and flavor.
For Serving
  • to taste fresh herbs (like parsley or basil) Optional, for garnish.

Method
 

Preparation
  1. Let the steak sit at room temperature for about 10 minutes before cooking.
  2. Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
Cooking the Steak
  1. Heat olive oil in a hot skillet over medium-high heat.
  2. Sear the steak for 4-5 minutes on each side until desired doneness.
  3. Remove the steak from the skillet and let it rest before slicing.
Making the Sauce
  1. In the same skillet, add minced garlic and sauté until fragrant.
  2. Lower the heat and stir in the cream, allowing it to simmer.
  3. Add grated parmesan cheese and stir until melted and creamy.
  4. Add cooked pasta and a splash of pasta water to help the sauce adhere.
  5. Mix in the sliced steak and spinach (or mushrooms) until well combined.
Serving
  1. Serve immediately, garnished with fresh herbs if desired.

Notes

For best results, save a bit of pasta water to adjust the sauce consistency if needed. Pair with a crisp salad and garlic bread for a complete meal.
