Main Ingredients
  • 4 medium russet or Yukon Gold potatoes Chopped into bite-sized pieces.
  • 1 pound sirloin steak Cut into hearty cubes.
  • 4 cloves garlic Chopped.
  • 1/2 cup butter Unsalted is preferred.
  • 2 tablespoons olive oil For cooking.
  • to taste sea salt For seasoning.
  • to taste black pepper For seasoning.
  • to taste smoked paprika Optional for extra flavor.
  • 1/4 cup fresh parsley Chopped, for garnish.

Method
 

Preparation
  1. Chop the potatoes into bite-sized pieces and heat olive oil in a hot skillet.
  2. Add the potatoes to the skillet and let them sizzle until they start to brown.
  3. While the potatoes cook, cut the steak into hearty cubes.
Cooking
  1. Once the potatoes are about 90% done, push them to one side of the pan.
  2. Add the steak cubes to the other side, season with salt, pepper, and garlic.
  3. Add a hunk of butter to the pan and toss everything gently.
  4. Let the steak sear without touching it for a few minutes.
  5. Stir everything to coat in butter and garlic once the steak is browned to your liking.
  6. Add the chopped parsley before serving.

Notes

Use a large pan to ensure the potatoes crisp up instead of steaming. Serve with garlic mayo or spicy ketchup for dipping.
