  • 1 lb thick steak (Ribeye or Sirloin) For best results, let steak come to room temperature before cooking.
  • 2 tbsp olive oil Use for frying the steak.
  • 4 cloves garlic Smashed and added for flavor.
  • 4 tbsp butter Baste the steak with this at the end for added richness.
  • 1 sprig fresh thyme Optional; enhances the flavor.
  • to taste salt Generously apply on steak.
  • to taste pepper Generously apply on steak.

Method
 

Preparation
  1. Remove steak from refrigerator and let it sit at room temperature for about 20 minutes.
  2. Pat the steak dry with paper towels. Season generously with salt and pepper.
Cooking
  1. Heat a heavy skillet over high heat until it is very hot.
  2. Add olive oil to the skillet and place the steak in, avoiding any movement to achieve a good sear.
  3. Cook until a deep brown crust forms, then flip the steak.
  4. Add butter, garlic, and thyme to the skillet. Baste the steak with the melted garlicky butter until desired doneness is reached.
  5. Remove the steak from the skillet and let it rest for a few minutes before slicing.

Notes

For best flavor, always allow the steak to rest before slicing to retain juices. Leftovers should be stored in the fridge and can be reheated gently.
