Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp sugar adjust to taste
  • 2 tsp baking powder make sure it's fresh
  • 1 pinch salt
Wet Ingredients
  • 1 large egg preferably large size
  • 1 cup milk can use whole, almond, or oat milk
  • 2 tbsp melted butter plus extra for the pan
  • 1 dash vanilla extract essential for flavor

Method
 

Preparation
  1. In a bowl, mix all dry ingredients: flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the wet ingredients: egg, milk, melted butter, and vanilla until smooth.
  3. Pour the wet mixture into the dry mixture and gently mix until just combined; lumps are okay.
  4. Let the batter rest for a couple of minutes.
Cooking
  1. Preheat a skillet over medium heat and grease with butter.
  2. Pour batter onto the skillet; when bubbles form on the surface, flip the pancake.
  3. Cook for another minute or until golden brown. Stack pancakes as they finish.

Notes

For light pancakes, use low-fat milk or reduce butter. You can add blueberries, chocolate chips, or banana slices for variety. Keep pancakes warm in a low oven while cooking the rest.
