  • 1/2 cup fresh lime juice Use fresh juice for best flavor.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder Adjust for spice level.
  • 1 teaspoon honey For balance.
For the toppings
  • 1 cup shredded cheese Cheddar or Monterey Jack works well.
  • 1/2 cup crushed tortilla chips Optional for extra crunch.
For serving
  • 4 cups cilantro-lime rice Perfect to soak up sauce.
  • 1 cup black beans or refried beans For fiber and flavor.
  • 1 cup fresh avocado salsa or crunchy lettuce For additional freshness.

Method
 

Preparation
  1. Combine all marinade ingredients in a bowl.
  2. Add chicken to the marinade and let it soak for at least 30 minutes.
Grilling
  1. Preheat grill to medium-high heat.
  2. Brush the grill grates with oil to prevent sticking.
  3. Grill chicken for 5-7 minutes on each side or until juices run clear.
  4. Remove from grill and top quickly with shredded cheese, allowing residual heat to melt it.
  5. Let chicken rest for a couple minutes before serving.
  6. Optional: sprinkle with crushed tortilla chips before serving.

Notes

For best flavor, use fresh ingredients. Chicken can be frozen without toppings; reheat gently while covered.
