A quick and easy weeknight meal that captures all the flavors of traditional egg rolls without the hassle of rolling or frying.

Ingredients
  

Main Ingredients
  • 1 lb Ground pork or ground turkey Use whatever you have on hand.
  • 1 bag Coleslaw mix (shredded cabbage) To save time.
  • 2 cloves Garlic Squished and chopped.
  • 1 TBSP Grated fresh ginger Powdered ginger can be used if fresh is not available.
  • 1 TBSP Soy sauce Use gluten-free soy sauce if needed.
  • 1 squirt Sriracha Add for heat (optional).
  • 2 scallions Green onions Chopped for topping.
  • 1 TBSP Sesame oil Drizzle at the end for flavor.

Method
 

Cooking
  1. In a large pan, add the ground pork (or turkey), and brown it while breaking it apart.
  2. Add the garlic and ginger and cook for a few minutes until fragrant.
  3. Add the coleslaw mix to the pan and stir well.
  4. Pour in the soy sauce and add the sriracha, stirring everything together.
  5. Cook for an additional 5 minutes until the vegetables soften.
  6. Remove from heat and stir in the sesame oil.
  7. Top with chopped green onions and serve in bowls.

Notes

Don't overcook your veggies; wilting is fine, but mushy is not. This dish can be made ahead of time and reheated. Store leftovers in the fridge.
