- Preheat oven to 400°F and grease a mini muffin pan.
- Press one pepperoni slice into each muffin cup.
- Mix mozzarella, parmesan, and seasoning in a bowl.
- Spoon cheese mixture into the pepperoni cups.
- Dot with pizza sauce if using.
- Bake for 10–12 minutes until golden.
- Cool for 5 minutes before popping them out of the pan.
Notes
1. Grease well: Even with pepperoni’s natural fats, the cheese will stick to the muffin tin without a light coating of oil. 2. Cool to crisp: The pepperoni only becomes a "stiff" cup once it has cooled for a few minutes out of the oven. 3. Avoid the grease: If your pepperoni brand is very fatty, pat the finished bites with a paper towel before serving to maintain the crunch.
