Ingredients
  

  • 24 slices pepperoni
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tbsp low-sugar pizza sauce optional
  • 1/2 tsp Italian seasoning
  • Cooking spray for the pan

  • Mini Muffin Pan
  • Small Mixing Bowl

Method
 

  1. Preheat oven to 400°F and grease a mini muffin pan.
  2. Press one pepperoni slice into each muffin cup.
  3. Mix mozzarella, parmesan, and seasoning in a bowl.
  4. Spoon cheese mixture into the pepperoni cups.
  5. Dot with pizza sauce if using.
  6. Bake for 10–12 minutes until golden.
  7. Cool for 5 minutes before popping them out of the pan.

Notes

1. Grease well: Even with pepperoni’s natural fats, the cheese will stick to the muffin tin without a light coating of oil. 2. Cool to crisp: The pepperoni only becomes a "stiff" cup once it has cooled for a few minutes out of the oven. 3. Avoid the grease: If your pepperoni brand is very fatty, pat the finished bites with a paper towel before serving to maintain the crunch.
