Ingredients
  

  • 1 lb ground chicken 1 can water chestnuts, 3 oz shiitake mushrooms
  • Sauce: 1/4 cup hoisin 2 tbsp soy sauce (total), 1 tbsp rice vinegar, 1.5 tbsp sesame oil (total)
  • Aromatics: 2 tsp ginger 3 cloves garlic, 1 shallot
  • Garnish: Scallions 1 head romaine lettuce

Method
 

  1. Whisk all sauce ingredients in a small bowl.
  2. Brown chicken in sesame oil in a large skillet.
  3. Add mushrooms and water chestnuts; sauté until soft.
  4. Pour sauce over chicken and simmer covered for 3 minutes.
  5. Taste and adjust seasoning (salt/sweet).
  6. Spoon filling into cold lettuce leaves and garnish with scallions.

Notes

1. Lettuce Choice: Butter lettuce is the easiest to wrap, but Romaine provides the best "crunch." 2. Dry the Chicken: Let the chicken get a brown crust before adding the sauce for maximum flavor. 3. The Aromatics: Fresh ginger is non-negotiable for that signature "zing."
