Ingredients
  

  • 240 ml mayonnaise
  • 3 –4 cloves fresh garlic
  • 30 ml lemon juice
  • 60 ml olive oil
  • Salt and black pepper to taste
  • 2.5 ml paprika or chili flakes
  • 8 g fresh parsley finely chopped

Method
 

  1. Grate or mince the garlic until it becomes a fine paste.
  2. In a bowl, whisk together the mayonnaise and lemon juice until smooth.
  3. Slowly drizzle the olive oil into the bowl while whisking constantly until thick and emulsified.
  4. Stir in the garlic paste, salt, and black pepper.
  5. Taste and add more lemon if needed.
  6. Garnish with paprika (or chili flakes) and fresh parsley.
  7. Refrigerate for 20 minutes before serving for the best flavor.
