Ingredients
  

  • 20 oz strawberries fresh or frozen
  • 1/3 cup granulated sugar
  • 1 tsp lemon zest optional
  • 1 tbsp lemon juice optional

Method
 

  1. Combine strawberries, sugar, zest, and juice in a saucepan over medium heat.
  2. Simmer for 8 minutes until strawberries soften and liquid thickens.
  3. Adjust sweetness with more sugar if desired; cook 1 min more to dissolve.
  4. Cool slightly and blend until smooth using an immersion or standard blender.
  5. Store in an airtight container; refrigerate for 2 weeks or freeze for 6 months.

Notes

1. Thaw Frozen Fruit: If using frozen berries, include all the juice that accumulates during thawing for the best flavor. 2. Seedless Option: For a professional "coulis," press the final puree through a fine-mesh sieve. 3. Acidity Matters: The lemon juice prevents the puree from tasting "flat" and helps maintain the bright red color.
